Cooking with Wafu (Recipes: Burgers & Smoked Salmon Salad)

A great meal, made better, by sharing with friends

After discovering, and falling in love with Wafu products, we created a whole Japanese meal (including sake). We used Wafu Original Sesame Dressing in a Smoked Salmon Salad (following a recipe found on the Wafu site) and it was wonderful. Smoked Salmon and Sesame Dressing mixed with chopped cucumber and a little green onion; this is definitely something I’ll slip into my culinary bag of tricks.

We also used the Wafu recipe to make their Original Burger. The burger was moist but I feel needed just a little more seasoning. Both of us like things a bit spicy so we topped ours with the Wasabi Mayo and were in heaven.

We prepared the above dishes, in combination with the Zucchini Fritters for dinner a couple of nights ago and were very impressed with the Wafu products, as well as the delicious, picture perfect outcome.

With spring around the corner (we can only hope), BBQ’s will soon be fired up all over the city. And ours will be one of the first. I grill and toss everything I can get my hands on, and am looking forward to trying the Wafu condiments on grilled meats and vegetable.  Listed below the Wafu products we tried and two recipes.

Japanese Dressings (gluten free versions available)

Original Sesame  – wonderful in or on anything (also a light version available)

Ginger Carrot  – great on any salad

Wasabi Edamame Dressing – again, on anything, salad, eggs etc.

Mayonaizu, Japanese Mayos

Sesame Mayonnaise – is good on just about everything.

Wasabi Mayonnaise – you’ve got to like Wasabi to enjoy this, we do.

Spicy Mayonnaise – very tasty with a big kick, best on any meat/deli meat sandwich or burger.

 

Recently, I sautéed a bunch of spinach in butter, then topped it with poached eggs and the Wasabi Edamame Dressing. For a lighter touch, you can omit the butter or use a little canola oil. You can switch the dressing to Ginger Carrot if you’re not partial to wasabi. Whichever combination you use, you’ll end up with a delicious, light, nutritious meal.

Cook This:  Smoked Salmon Salad and Original Wafu Burger

Recipe Smoked Salmon Salad salad

225 g smoked salmon, sliced
6 Lebanese cucumbers, cubed (or substitute with 1/2 english cucumber)
1 green onion, finely chopped
½ cup Wafu Original Sesame

Instructions

Cut smoked salmon slices into bite-size pieces.
In a bowl, mix cucumbers and green onion. Add the smoked salmon and toss.
Serve with Wafu Original.

SERVES: 4
PREP TIME: 15 minutes
Optional: Garnish with chopped dill or parsley.

 

 

Wafu Original Burger

560 g ground beef
½ onion, chopped
2 garlic cloves, finely choppedDSC_0047 (1)
1 teaspoon fresh ginger, very finely chopped
1 egg
½ cup Wafu Original Sesame
1 cup bread crumbs
Coarse salt and freshly ground black pepper
4 whole wheat hamburger buns
1 large tomato, sliced
1 onion, sliced
4 large Boston lettuce leaves

Instructions:

Preheat grill to high.

Place ground beef in a large mixing bowl. Add chopped onion, garlic and ginger and mix with a wooden spoon. Add egg, Wafu Original and bread crumbs, mixing well after each.

Divide the meat into 4* equal portions. Lightly pat each portion into a 1¼-cm-thick patty.

Season each patty on both sides with salt and pepper.

Arrange tomato slices, onion slices and lettuce leaves on a serving platter.  DSC_0078

When ready to grill, place the burgers on the hot grate. Grill burgers until cooked to taste, 3 to 4  minutes per side for medium-rare.

Meanwhile, place the hamburger buns on the hot grate and grill until lightly toasted, 1 to 2 minutes per side.

To serve, place a lettuce leaf on top of each bun. Top with a burger, tomato slice and onion.

Serve with Wafu Mayo.

PREP TIME: 20 minutes
COOKING TIME: 10 minutes
